1. Prepare the Syrup

In a saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool.

2. Infuse the Vermouth

In a large glass jar, combine the white vermouth, cooled sugar syrup, herbs, citrus zest, and spices. Seal the jar tightly.

3. Let it Rest

Allow the mixture to infuse in a cool, dark place for at least 48 hours, shaking the jar gently every 12 hours.

4. Strain and Bottle

After the infusion period, strain the vermouth to remove the solids. Pour the infused vermouth into a clean bottle, and seal tightly.

5. Serve
