Prepare the Marinade

In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, sea salt, and black pepper. Mix well.

Marinate the Lamb

Place the lamb chops in a shallow dish and pour the marinade over them. Allow to marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

Prepare the Vegetables

While the lamb is marinating, preheat your grill or oven to medium-high heat. Toss the asparagus and baby potatoes with olive oil, salt, and pepper.

Grill the Lamb and Vegetables

Grill the lamb chops for 4-5 minutes on each side, depending on your preferred doneness. At the same time, grill the asparagus and baby potatoes until tender and slightly charred, about 8-10 minutes.

Serve

Once cooked, let the lamb rest for a few minutes, then serve with the grilled asparagus and baby potatoes.
