Infuse the Base

In a large glass jar, combine the bitter orange peel, sweet orange peel, chinotto, and herbs and spices mix. Pour the neutral grain spirit over the ingredients. Seal the jar tightly and let it infuse in a cool, dark place for about 2 weeks.

Prepare the Syrup

After the infusion period, make a simple syrup by combining the sugar and water in a saucepan over medium heat. Stir until the sugar is completely dissolved, then let it cool.

Combine and Filter

Once the syrup is cool, strain the infused spirit through a fine mesh sieve or cheesecloth to remove the solids. Combine the filtered infusion with the simple syrup.

Bottle and Age

Transfer the mixture into a clean bottle and seal it. Let the Campari age for an additional week in a cool, dark place for the flavors to meld.
