Chill glass

Place a small rocks or coupe glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to ensure the drink is served slightly chilled.

Combine ingredients

In a mixing glass or shaker filled with ice, pour 2 tablespoons Amaro Nonino, 1 tablespoon grappa (or high-proof neutral spirit), 1/2 teaspoon simple syrup, and 2 dashes/tsp of orange bitters. The bitters measurement may be adjusted to taste — start with 2 small dashes if using a dropper-style bottle.

Stir and dilute

Stir the mixture briskly with a bar spoon for about 20–30 seconds (or about 20–30 full turns) to properly chill and dilute the drink. If you used a shaker, a gentle swirl is fine, but stirring produces a smoother texture.

Strain

Discard ice or water from the chilled glass. Strain the mixed cocktail from the mixing glass into the chilled rocks or coupe glass over one large clear ice cube (optional) or neat if preferred.

Garnish and serve

Express the oils from the orange peel over the surface of the drink by holding the peel skin-side down and giving it a firm twist about 4–6 inches above the glass, then run the peel around the rim and drop it into the drink (or set on the rim). Serve immediately as an after-dinner digestif.
