Shellfish Arancini

Method

Preparation and Cooking

  1. 1

    Cook the Rice

In a medium saucepan, bring 4 cups of water to a boil. Add the Arborio rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 20 minutes until the rice is tender and creamy. Let cool.

  2. 2

    Prepare the Shellfish Mixture

In a mixing bowl, combine the cooked Arborio rice, shellfish, Parmesan cheese, salt, and black pepper. Mix well.

  3. 3

    Form the Arancini

Once the rice mixture is cool enough to handle, take a small portion and form it into a ball (about the size of a golf ball). Repeat until all mixture is used.

  4. 4

    Breading the Arancini

Set up a breading station with three bowls: one for flour, one for beaten eggs, and one for breadcrumbs. Roll each arancini ball in flour, dip in egg, and coat with breadcrumbs.

  5. 5

    Fry the Arancini

In a deep frying pan, heat vegetable oil over medium heat. Fry the arancini in batches, turning occasionally, until golden brown and crispy (about 3-4 minutes). Drain on paper towels.

  6. 6

    Serve

Serve the shellfish arancini warm with vodka sauce and basil pesto for drizzling or dipping.
