    Cook the Bucatini

    Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

    Prepare the Sauce

    In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove pancetta and set aside, leaving the fat in the skillet.

    Sauté the Onions

    In the same skillet, add chopped onion and sauté until translucent, about 3-4 minutes.

    Add Tomato Sauce

    Pour in the tomato sauce and cook for another 5 minutes, stirring occasionally. Add chili oil, and season with salt and black pepper to taste.

    Combine with Pasta

    Add the drained bucatini to the sauce, along with the reserved pasta water as needed to loosen the sauce. Toss to combine.

    Finish and Serve

    Stir in the crispy pancetta and fresh basil leaves. Serve hot with additional chili oil and basil on top if desired.
