    Prepare the Rabbit

    In a large pot, heat the olive oil over medium heat. Season the rabbit pieces with salt and black pepper, then brown them in the pot until golden on all sides. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion and sweet bell peppers. Sauté until the onion becomes translucent, about 5 minutes. Add the minced garlic and cook for another minute.

    Add Tomatoes and Liquids

    Pour in the crushed tomatoes, chicken broth, and red wine. Stir well to combine.

    Simmer the Stew

    Return the browned rabbit pieces to the pot. Add the fresh herbs. Bring to a boil, then reduce the heat to low and cover. Let it simmer for about 1 hour, or until the rabbit is tender.

    Finish with Spinach

    Stir in the chopped spinach during the last 5 minutes of cooking. Adjust seasoning with more salt and pepper if needed.

    Serve the rabbit cacciatore hot, ideally over a bed of creamy risotto.
