Prepare the Chicken
Pound the chicken breasts to an even thickness. Season with salt and black pepper.

Wrap the Chicken
Place 2 slices of Parma ham on each chicken breast, followed by 3 sage leaves. Secure with toothpicks if necessary.

Sear the Chicken
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the wrapped chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

Make the Piccata Sauce
In the same skillet, add the white wine, scraping up any browned bits from the bottom. Allow it to reduce by half, then add the chicken broth and lemon juice. Bring to a simmer.

Finish the Sauce
Stir in the remaining tablespoon of butter until melted. Return the chicken to the skillet and simmer for an additional 3-4 minutes.

Serve
Plate the chicken with the piccata sauce spooned over the top and a side of sautéed spinach.
