    Cook the Pasta

    In a large pot of salted boiling water, cook the fettuccini according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Cook the Pancetta

    In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat.

    Prepare the Egg Mixture

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

    Combine Ingredients

    Add the drained fettuccini to the skillet with the pancetta. Toss to combine. While the pasta is still hot, pour the egg mixture over the pasta, tossing quickly to create a creamy sauce. If needed, add reserved pasta water a little at a time to reach desired consistency.

    Serve

    Serve immediately with extra Parmesan cheese and freshly ground black pepper on top.
