1. Make the Filling

In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, mini chocolate chips, and cinnamon. Mix until smooth and creamy. Cover and refrigerate for at least 30 minutes.

Preheat the oven to 375°F (190°C). Roll out the cannoli dough on a floured surface until thin. Cut into 4-inch circles.

3. Fry the Shells

Wrap each dough circle around a cannoli tube and seal the edges with a bit of egg wash. Fry in hot oil until golden brown, about 2-3 minutes. Remove and let cool.
