    Prepare the Sofrito

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are soft and translucent, about 5-7 minutes.

    Add Garlic and Meats

    Stir in the minced garlic and cook for another minute. Then, add the ground beef and pork to the skillet. Cook until browned, breaking up the meat with a spoon, about 8-10 minutes.

    Add Tomatoes and Seasonings

    Add the crushed tomatoes, tomato paste, red wine, oregano, salt, and pepper to the skillet. Stir to combine and bring to a simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer uncovered for at least 30 minutes, stirring occasionally. The longer it simmers, the better the flavors develop.

    Cook Spaghetti

    While the sauce is simmering, cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.

    Combine and Serve

    Once the sauce is ready, combine it with the cooked spaghetti. Serve hot, topped with grated Parmesan cheese to taste.
