    Prepare the Eggplant

    Slice the eggplants into 1/2 inch thick rounds. Sprinkle salt on both sides and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Bake the Eggplant

    Brush each eggplant slice with olive oil and arrange them in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown.

    Layer the Ingredients

    In a baking dish, spread a thin layer of tomato sauce on the bottom. Layer half of the eggplant, followed by half of the remaining tomato sauce, half of the mozzarella cheese, and half of the Parmesan cheese. Repeat with the remaining ingredients.

    Bake the Dish

    Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

    Garnish and Serve

    Remove from the oven, let cool for a few minutes, then garnish with fresh basil and black pepper to taste. Serve warm.
