1. Prepare the Ingredients
Chop the smoked chicken and smoked pancetta into bite-sized pieces. Slice the mushrooms and mince the garlic.
2. Cook the Pancetta
In a large skillet, heat olive oil over medium heat. Add the smoked pancetta and cook until crispy, about 5 minutes.
3. Sauté the Vegetables
Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender, about 4-5 minutes.
4. Add the Chicken and Sauce
Stir in the smoked chicken and cook for another 2 minutes. Then, pour in the tomato sauce, and season with salt and black pepper to taste.
5. Simmer
Reduce the heat to low and let the mixture simmer for 10 minutes, allowing the flavors to meld.
6. Add Cheese
Remove the skillet from heat and fold in the smoked mozzarella until melted and combined.
7. Serve
Garnish with fresh basil and serve hot, either on its own or over pasta.
