Preheat and prepare

Preheat your waffle iron according to manufacturer's instructions to medium-high heat. If your waffle iron recommends brushing or spraying with fat, have softened butter or nonstick spray ready.

Combine dry ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine salt until evenly combined. Stir in the pearl sugar so it's distributed through the dry mix.

Mix wet ingredients

In a separate bowl or large measuring cup, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth and homogenous.

Make the batter

Pour the wet ingredients into the dry ingredients. Gently stir until just combined — small lumps are fine. Do not overmix. The batter will be thick. Let the batter rest 5 minutes to hydrate the flour and allow the pearl sugar to settle slightly.

Cook the waffles

Brush the preheated waffle iron lightly with the optional butter or spray. Spoon or pour batter onto the center of the waffle iron (use about 1/2 to 3/4 cup batter per standard waffle, adjust for your iron). Close the lid and cook until waffles are golden brown and crisp, and steam diminishes (typically 4–6 minutes depending on your iron). The pearl sugar will create little glossy spots and slight caramelization—take care when removing to avoid hot sugar.

Keep warm (optional)

If making multiple waffles, keep finished waffles warm and crisp on a wire rack set over a baking sheet in a 200°F (95°C) oven while you cook remaining batter. Do not stack waffles directly as they will steam and soften.

Prepare fruit

While waffles are cooking or resting, hull and slice the strawberries and peel and slice the banana into 1/4-inch rounds. Arrange on a plate or bowl for quick topping.

Warm Nutella (optional)

To make Nutella easier to spread or drizzle, transfer the required amount to a microwave-safe bowl and heat in 10–15 second bursts, stirring in between, until slightly runny but not hot (about 20–30 seconds total depending on microwave). Alternatively, place the jar in a bowl of hot water for a few minutes.

Assemble waffles

Place a hot waffle on a serving plate. Spread or drizzle about 1 to 2 tablespoons of warmed Nutella over the waffle surface. Arrange sliced strawberries and banana on top of the Nutella. Drizzle ~1 to 2 tablespoons of maple syrup over the fruit and waffle.

Finish and serve

Dust the assembled waffle lightly with powdered sugar (about 1 teaspoon per waffle). Serve immediately while waffles are hot and Nutella is slightly gooey. Repeat assembly for remaining waffles.
