Method
French Toast & Tres Leches Batter
Prepare batter
In a large shallow bowl or wide mixing bowl, whisk together whole milk, evaporated milk, sweetened condensed milk until homogeneous. Add the eggs, granulated sugar, vanilla extract, ground cinnamon, and salt. Whisk vigorously until slightly frothy and fully combined (about 30–45 seconds).
Soak bread
Arrange brioche slices in a single layer on a sheet pan. Working with 2–3 slices at a time, dip each brioche slice into the tres leches batter, submerging for 5–8 seconds per side so it absorbs but does not fall apart. Let excess drip off for 5–10 seconds and transfer to a wire rack while you heat the pan.
Cook French toast
Heat a large skillet or griddle over medium heat and add 1 tablespoon unsalted butter. When foam subsides and butter is shimmering, add 3–4 soaked brioche slices without crowding. Cook until deep golden brown, about 3–4 minutes per side, pressing gently with a spatula for even contact. Add remaining 1 tablespoon butter as needed and cook remaining slices. Keep finished slices warm in a 200°F (95°C) oven on a baking sheet while you finish others. Total cook time ~12–16 minutes depending on batch size.
Fresh Berries & Garnish
Rinse berries and gently pat dry. Quarter strawberries and place in a small bowl with blueberries and raspberries. If desired, toss them very lightly with 1 teaspoon of granulated sugar or 1 teaspoon lemon juice to perfume (optional). Reserve mint leaves for garnish.
Honey Whipped Cream
Make whipped cream
Chill a medium mixing bowl and whisk or beaters for 5–10 minutes (optional but helps). Pour cold heavy cream into the bowl. Add honey, powdered sugar, and vanilla extract. Whip by hand or with an electric mixer on medium-high speed until soft peaks form (about 2–3 minutes). Taste and adjust honey to preference; do not overwhip — stop at soft-to-medium peaks. Transfer to a piping bag or bowl and refrigerate until ready to serve.
Sweet Maple Drizzle
Combine maple syrup, brown sugar, and butter in a small saucepan over low heat just until butter melts and sugar dissolves, stirring constantly (about 1–2 minutes). Remove from heat and keep warm. Alternatively, microwave in a small microwave-safe bowl in 15-second bursts, stirring between, until combined and warm. Do not boil.
Assembly & Serve
Place two warm brioche tres leches French toast slices per plate, slightly overlapping. Spoon a generous dollop (about 2–3 tablespoons) of honey whipped cream onto each stack or pipe a decorative rosette. Arrange a mixed handful (about 1/3 cup) of fresh berries alongside and on top. Drizzle warm sweet maple syrup lightly over the toast and berries (about 1–2 tablespoons per serving). Garnish with 2–3 mint leaves. Serve immediately while warm.
Leftovers: Refrigerate unused whipped cream and any extra berries separately. Keep cooked French toast in an airtight container for up to 24 hours; reheat gently in a warm oven (300°F / 150°C) for 8–10 minutes to restore texture.
