Prepare Flavoring Concentrate

Simmer spices and zest

In a small saucepan combine 2 tbsp water, broken cinnamon stick, crushed coriander seeds, orange zest, and freshly grated nutmeg. Bring to a gentle simmer over low heat for 5 minutes to release the aromatics. Do not boil dry.

Remove saucepan from heat and let steep for 10 minutes to intensify flavor. Strain the liquid through a fine mesh sieve into a small bowl, pressing solids to extract liquid. Discard solids and return the strained liquid to the saucepan.

While still warm, stir in cane sugar and vanilla extract until the sugar dissolves completely, forming a lightly flavored syrup. If using caramel color for authentic appearance, stir in 1 tsp now. Taste and adjust — it should be sweet with bright citrus and warm spice notes. Let the syrup cool to room temperature, then chill in the fridge for at least 15 minutes.

Assemble Mexican-style Coca-Cola

Make sure your carbonated water is very cold (near fridge temperature). Fill three 12 oz glasses or bottles with ice if desired, or chill bottles in the refrigerator.

For each 12 oz serving, add approximately 2 tablespoons of the prepared flavoring syrup to the glass or bottle. (Total syrup yield above is enough for about 3 servings — adjust proportionally for more.)

Slowly pour 12 fl oz of cold carbonated water into each glass or bottle over the back of a spoon or down the side to preserve carbonation and minimize foaming. Stir gently one or two times to incorporate the syrup without flattening the soda.

Taste and adjust sweetness or acidity: add up to 1 tsp more cane sugar dissolved in a little warm water if you prefer sweeter, or a few drops of fresh lime juice for brighter acidity.

Garnish with a lime wedge if desired and serve immediately, chilled. Enjoy as you would a Mexican Coca‑Cola — crisp, cane-sweet, and refreshing.
