Prepare plantains

Peel the plantains by cutting off the ends and running a small shallow slit along the length of the skin; remove the peel. Slice each plantain on the bias into 1/2-inch (about 1.2 cm) thick diagonal slices. This creates larger surface area for caramelization.

If using sour cream instead of Mexican crema: whisk 1/2 cup sour cream with 1 to 2 tablespoons whole milk until smooth and pourable. Taste and adjust to desired tang/smoothness.

Frying

Heat oil

Pour 1 cup vegetable oil into a heavy skillet (cast iron or stainless) so the oil is about 1/4-inch deep. Heat over medium to medium-high heat until shimmering and a small piece of plantain sizzles gently (about 325–350°F / 160–175°C).

Fry plantains

Working in a single layer and without crowding, add plantain slices to the hot oil. Fry until deep golden brown and caramelized, about 2–3 minutes per side depending on thickness and ripeness. Use tongs or a slotted spoon to flip once after the first side is golden. Adjust heat as needed so they brown rather than burn.

Drain and season

Transfer fried plantains to a paper towel–lined plate to drain. Immediately sprinkle with the 1/2 tsp fine sea salt while still hot so the salt adheres.

Assemble & Finish

Arrange the warm fried plantain slices on a serving platter or individual plates in a single layer or slightly overlapping.

Drizzle the 1/2 cup Mexican crema evenly over the plantains. If you prefer thinner drizzle, stir 1–2 teaspoons of milk into the crema first.

Scatter the 3/4 cup crumbled queso fresco over the crema-dressed plantains so the salty, crumbly cheese contrasts with the sweet plantain.

Finish with a light grind of black pepper (1/4 tsp), the chopped cilantro (2 tbsp) if using, and a squeeze of lime over the top if you like a bright acidic note (use half a lime).

Serve immediately while the plantains are warm. These are best eaten the same day as frying to retain their caramelized exterior.
