Method

Prepare vegetables (crudité)

    Wash and dry

    Rinse all vegetables under cold water and pat dry thoroughly with a clean kitchen towel or paper towels. Drying helps the dip adhere and keeps the platter crisp.

    Slice and arrange cucumbers and peppers

    Trim the ends off the cucumber and cut into 1/4-inch rounds or half-moons if the cucumber is large. Remove seeds and stem from the bell peppers, then cut each into 8–10 thin strips (about 3–4 inches long) for easy dipping.

    Prep carrots, celery, radishes and endive

    If baby carrots are large, halve them lengthwise. Trim celery into 3–4 inch sticks. Trim radish tops and ends and slice in half if large. Separate endive leaves and rinse between layers; keep leaves whole for scooping.

    Prepare snap peas and tomatoes

    Trim any strings from sugar snap peas. Leave cherry tomatoes whole. Pat both dry and place on the platter.

    Arrange on platter

    On a large serving platter or board, arrange vegetables in groups or in a colorful fan pattern, leaving space in the center or at one end for the herbed dip bowl. Keep similar textures together (e.g., crunchy sticks, scooping leaves, bite-sized pieces). Cover and chill briefly if preparing ahead (up to 2 hours).

Make herbed dip

    Combine base ingredients

    In a medium bowl, whisk together 1 cup Greek yogurt and 1/2 cup sour cream until smooth and creamy.

    Add herbs and aromatics

    Stir in the chopped parsley, dill, and chives, then add the minced garlic. Mix until evenly distributed.

    Season and balance

    Add the lemon juice, olive oil, kosher salt, and black pepper. Taste and, if the mixture is too tangy, whisk in the optional 1/2 tsp honey to balance. Adjust salt and pepper to taste.

    Chill to develop flavor

    Cover the dip and refrigerate for at least 20 minutes (preferably 30–60 minutes) to allow the herbs and garlic to meld with the yogurt. If short on time, you can serve immediately, but flavors are brighter after chilling.

    Finish and garnish

    Before serving, give the dip a quick stir, drizzle the teaspoon of olive oil over the top if desired, and sprinkle with smoked paprika and extra chopped herbs for color and aroma.

    Place the chilled herbed dip in a bowl at the center of the arranged crudité platter. Arrange lemon wedges nearby for guests who want extra brightness. Serve immediately and replenish vegetables as needed.
