Method

Butter Sugar Cookies

    In a large bowl, cream 1 cup softened unsalted butter and 3/4 cup granulated sugar with an electric mixer on medium speed until light and fluffy, about 2–3 minutes. Beat in 1 large egg and 1 tsp vanilla extract until combined.

    Whisk together 2 1/4 cups all-purpose flour, 1/2 tsp baking powder, and 1/4 tsp salt in a separate bowl. Gradually add the dry mixture to the butter mixture on low speed until just combined; do not overmix.

Lemon Shortbread Cookies

    In a bowl, beat 1 cup softened unsalted butter with 1/2 cup powdered sugar until smooth and pale, about 2 minutes. Mix in lemon zest and 1 tablespoon lemon juice until incorporated.

    Stir in 2 cups all-purpose flour and 1/4 tsp salt until a soft dough forms. Turn dough onto plastic wrap, form into a log (about 2 inches diameter) for slice-and-bake, or roll to 1/4-inch thickness for cutouts. Chill for at least 30 minutes to firm.
