    Preheat your oven to 400°F (200°C). Wash the Russet potatoes thoroughly and poke holes in them with a fork. Place them directly on the oven rack and bake for about 45-60 minutes until tender.

    Remove the baked potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a small border around the skin.

    Mix the Ingredients

    To the potato insides, add butter, sour cream, half of the cheddar cheese, chopped green onions (reserve some for garnish), salt, black pepper, and bacon bits. Mash together until creamy and well combined.

    Stuff the potato skins with the filling mixture, mounding slightly on top. Sprinkle the remaining cheddar cheese over each filled potato.
