Prepare the Filling
In a mixing bowl, combine the tiger prawns, green onions, ginger, garlic, soy sauce, sesame oil, cornstarch, salt, and pepper. Mix well until all ingredients are evenly coated.

Assemble the Dumplings
Take a dumpling wrapper and place about 1 tablespoon of the filling in the center. Wet the edges of the wrapper with water, fold it over to create a half-moon shape, and press to seal. Repeat with the remaining wrappers and filling.

Cook the Dumplings
Bring a pot of water to a boil. Carefully add the dumplings and cook for about 5-7 minutes, or until they float to the top and are cooked through. Remove and drain.

Serve
Drizzle with chili oil and garnish with microgreens before serving.
