Prepare the Tuna
Rub the tuna steaks with togarashi spice blend on both sides. Let them marinate for about 10 minutes.

Stir-Fry the Vegetables
In a large skillet or wok, heat peanut oil over medium-high heat. Add bell peppers, broccoli, carrot, and snap peas. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

Add Sweet Chili Sauce
Pour sweet chili sauce over the vegetables and toss to coat. Cook for another 2 minutes.

Cook the Tuna
In a separate pan, sear the marinated tuna steaks for 2-3 minutes on each side for medium-rare, or longer if desired.

Prepare Miso Mustard
In a small bowl, mix equal parts miso paste and Dijon mustard to taste.

Serve
Place the stir-fried vegetables on a plate, top with sliced tuna, drizzle eel sauce over the top, and sprinkle with sesame seeds. Serve with miso mustard on the side.
