Preparation

    Soak the Plank

    Soak the maple wood plank in water for at least 1 hour before cooking to prevent it from catching fire.

    Make the Glaze

    In a small saucepan, combine maple syrup, bourbon, soy sauce, Dijon mustard, minced garlic, and black pepper. Bring to a simmer over medium heat and let it reduce for about 10 minutes until slightly thickened. Remove from heat.

Cooking the Salmon

    Preheat the Grill

    Preheat your grill to medium heat.

    Prepare the Salmon

    Place the salmon fillets on the soaked maple plank, skin-side down. Brush generously with the bourbon glaze.

    Grill the Salmon

    Place the plank on the grill and cover. Grill for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Cooking the Hash

    Cook the Potatoes

    In a large skillet, heat olive oil over medium heat. Add the diced baby potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.

    Add Asparagus and Herbs

    Add the asparagus and fresh herbs to the skillet with the potatoes. Season with salt and pepper. Cook for an additional 5-7 minutes until the asparagus is tender and everything is well combined.

Serving

    Plate the Dish

    Serve the grilled salmon on a plate with a generous portion of the potato and asparagus hash on the side. Drizzle any remaining bourbon glaze over the top.
