    Roast the Onions

    Preheat the oven to 400°F (200°C). Toss the sliced red onions with 1 tablespoon of olive oil and balsamic vinegar. Spread them on a baking sheet and roast in the oven for 25 minutes until caramelized.

    Grill the Salmon

    While the onions are roasting, preheat the grill to medium-high heat. Brush the salmon fillets with 1 tablespoon of olive oil and season with salt and pepper. Grill for about 4-6 minutes on each side until cooked through and flaky.

    Prepare the Vinaigrette

    In a small bowl, mix together 2 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, salt, and pepper to taste. Whisk until combined.

    Assemble the Salad

    In a large bowl, combine the roasted onions, stale bread cubes, cherry tomatoes, kalamata olives, and torn basil. Drizzle the vinaigrette over the salad and toss gently to combine.

    Plate the panzanella salad and top with grilled salmon fillets. Sprinkle crumbled goat cheese over the top and serve with garlic aioli on the side.
