Bang Bang Rock Shrimp & Shishitos
Preparation
1. Prepare the Bang Bang Sauce
In a bowl, whisk together mayonnaise, Sriracha sauce, honey, rice vinegar, lime juice, salt, and black pepper. Adjust seasoning to taste and set aside.
2. Prepare the Rock Shrimp
Rinse rock shrimp under cold water and pat dry with paper towels. Season with salt and black pepper.
3. Create the Breading Station
Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each shrimp in flour, dip into the egg, and then coat with panko breadcrumbs.
4. Fry the Rock Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded rock shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.
5. Sauté the Shishito Peppers
In the same skillet, add shishito peppers and sauté for about 3-4 minutes until blistered and tender. Sprinkle with salt.
6. Serve
Arrange the fried rock shrimp and sautéed shishito peppers on a serving platter. Drizzle with Bang Bang sauce and serve warm.
