Make the Dough
In a large bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until dough forms. Wrap in plastic and refrigerate for at least 1 hour.

Prepare the Filling
In a separate bowl, toss sliced apples with lemon juice, cinnamon, and brown sugar. Set aside to let the flavors meld.

Assemble the Croustades
Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles, place a spoonful of the apple mixture in the center, and fold over to create a turnover. Seal edges using a fork.

Bake
Place the turnovers on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.

Prepare Boozy Maple Syrup
In a small saucepan, combine maple syrup and a splash of your favorite liquor (like bourbon or rum). Heat gently until warm.

Serve the warm croustades drizzled with the boozy maple syrup and a scoop of vanilla ice cream.
