Preparing oysters

Inspect and chill

Keep oysters cold until just before shucking. Discard any oysters with cracked shells or a strong off odor. Rinse shells under cold running water to remove grit.

Set up shucking station

Line a sturdy surface with a towel. Have oyster knives, gloves or a thick towel, a bowl for liquor, and a tray of crushed ice ready. Place a large shallow serving platter or bowl nearby and fill it with a 1–2-inch bed of crushed ice.

Shuck oysters

Wearing a protective glove or holding the oyster in a folded towel, insert the tip of the oyster knife into the hinge and twist gently until it pops. Slide the knife along the top shell to sever the muscle, lift off the top shell, and discard. Run the knife under the oyster to free it from the bottom shell while keeping the liquor (brine) in the shell. Arrange each oyster on the prepared ice bed, keeping them level so they don't spill their liquor.

Make mignonette

In a small bowl combine the red wine vinegar, finely minced shallot, freshly ground black pepper, and sea salt. Stir to dissolve the salt. Taste and adjust acidity or salt if needed. If using, stir in chopped chives. Let the mixture rest for 10–15 minutes at room temperature so flavors meld.

Make cocktail sauce

In a separate bowl mix the ketchup, prepared horseradish, fresh lemon juice, Worcestershire sauce, and hot sauce (if using). Taste and adjust horseradish or lemon to reach the desired heat and brightness. Chill until ready to serve.

Assemble & serve

Just before serving, top each oyster lightly with a small spoonful (about 1/2 tsp) of mignonette or place a small dollop (about 1/2 tsp) of cocktail sauce on the side of the shell — do not drown the oyster; the goal is to complement, not overpower. Add a small squeeze of lemon to any oysters you prefer brightened. Finish with a very light dusting of freshly cracked black pepper and, if desired, a few microgreens or parsley for color.

Serve the platter immediately on ice with extra lemon wedges, remaining mignonette and cocktail sauce in small bowls for guests to use. Advise guests to slurp oysters directly from the shell to enjoy the liquor and meat together.

Any leftover shucked oysters should be consumed the same day. Store tightly covered on ice in the refrigerator and use within a few hours; do not keep at room temperature.
