Prep

Preheat oven to 325°F (160°C). Pat the ribs dry with paper towels. If ribs are a full rack, cut into single-serving portion (about 1 lb) for a child.

Season

In a small bowl, combine kosher salt, black pepper, paprika, brown sugar and garlic powder. Rub olive oil evenly over the ribs, then coat both sides of the ribs with the dry rub, pressing it lightly so it adheres.

Bake Covered

Place the seasoned ribs bone-side down in a shallow baking dish. Add 1/4 cup water to the dish to keep ribs moist. Cover tightly with foil and bake in the preheated oven for 1 hour to 1 hour 10 minutes, until meat is tender but not falling completely off the bone (kid-friendly texture).

Glaze & Broil

Remove the foil, brush the ribs with the mild BBQ sauce on both sides. Increase oven temperature to broil (or 450°F/230°C if no broiler). Return the ribs to the oven, uncovered, and broil/roast for 4–6 minutes until sauce is bubbly and slightly caramelized — watch closely so it doesn't burn. Remove from oven and let rest 5 minutes. Slice into child-sized pieces between bones.

Prep Potatoes

Wash and peel the potato if desired. Cut into evenly sized sticks about 1/3 inch thick so they cook uniformly. Place cut fries in a bowl of cold water and soak 15 minutes to remove excess starch for crispiness. Drain and pat completely dry with a kitchen towel.

Optional Dusting

If using cornstarch, toss the dried potato sticks with 1 teaspoon cornstarch until lightly coated — this gives extra crispness for kids who prefer a crunchier fry.

Pan Fry (Shallow Fry for Kids Portion)

Pour 1 cup vegetable oil into a medium nonstick skillet and heat over medium-high until shimmering but not smoking (about 325–350°F if using a thermometer). Add fries in a single layer (you may need to do this in two small batches). Cook, turning occasionally, about 6–8 minutes until golden and tender. Remove to a paper towel-lined plate to drain excess oil and immediately season with 1/2 tsp kosher salt.

Alternatively: Oven-Baked Fries

Toss dried fries with 1/2 tbs olive oil and spread on a baking sheet in a single layer. Bake in the 425°F (220°C) oven for 18–22 minutes, flipping once halfway, until golden and crisp. Season with salt when hot.

To Serve (Kids)

Arrange a small portion of ribs (about 1 lb portion sliced) and a handful of fries on a child-sized plate. Include 2 tablespoons ketchup for dipping and optional apple slices on the side. Let food cool slightly so it is safe for a child to eat. Serve with a small cup of water or milk.
