Make the patties

Place the ground beef in a bowl. Add salt, black pepper, onion powder, and Worcestershire sauce. Gently mix just until combined — do not overwork. Divide into 8 equal portions (about 2 oz each) and form into small, slightly flattened patties that are a little larger than the slider buns.

Cook the patties

Heat a large skillet or griddle over medium-high heat. Add a light brushing of oil or nonstick spray if needed. Place patties in the skillet without crowding. Cook 2–3 minutes on the first side until browned, flip, and cook another 1–2 minutes. Place a slice of American cheese on each patty in the last 30–45 seconds and cover the pan briefly to melt the cheese. Internal temperature should reach 160°F (71°C).

Prepare buns

While patties cook, split the mini buns. Lightly butter the cut sides with softened butter. Toast the cut sides in a separate skillet or under a broiler for 1–2 minutes until golden — watch carefully to avoid burning.

Assemble sliders

On the bottom half of each bun, place a cheeseburger patty. Add a pickle slice, a small amount of ketchup (about 1/2 tsp) and a touch of mustard (about 1/4 tsp) if desired. Top with the bun crown. Serve warm.

Prep potatoes

Wash and peel the potatoes if desired. Cut each potato into 1/4-inch thick matchstick fries. Place cut fries in a bowl of cold water and soak for 15–20 minutes to remove excess starch; this helps them crisp.

Dry and season

Drain the potatoes and pat very dry with clean kitchen towels or paper towels. Toss with paprika and a pinch of kosher salt to season lightly before frying.

Fry the potatoes

In a medium saucepan or deep skillet, add vegetable oil and heat to 325°F (160°C) for the first cook. Fry the potatoes in small batches for 3–4 minutes until tender but not browned. Remove and drain on paper towels. Increase oil temperature to 375°F (190°C). Fry the blanched fries again in batches for 1–2 minutes until golden and crisp. Drain on paper towels and immediately season with additional kosher salt to taste.

Oven-baked alternative

If you prefer baking, toss dried potatoes with 1 tbs oil, spread in a single layer on a parchment-lined sheet, bake at 425°F (220°C) for 20–25 minutes, flipping halfway, until golden and crisp. Season with salt and paprika when hot.

Serve

Plate 2–3 sliders per child with a handful of fries. Add extra ketchup or ranch for dipping on the side. Serve immediately while sliders are warm and fries are crisp.
