For the jalapeño-infused tequila

Prepare jalapeño

Wash the jalapeño. Slice lengthwise and remove seeds if you want milder heat; leave seeds for more spice. Cut into 2–3 long strips.

Infuse tequila

Place the jalapeño strips in a clean, airtight bottle or jar. Pour 8 oz Corazón Blanco tequila over the jalapeño so the pepper is fully submerged. Seal and store at room temperature or refrigerated. Taste after 4 hours; infusion will be mild. For medium heat, wait 12–24 hours. For strong heat, infuse up to 48 hours, then remove the jalapeño to prevent over-bitter flavor.

For the grilled pineapple syrup

Grill pineapple

Slice fresh pineapple into rings or chunks to yield roughly 1 cup of fruit. Preheat a grill or grill pan to medium-high. Grill pineapple pieces 2–3 minutes per side until char marks appear and sugars caramelize. Remove and let cool slightly.

Make syrup

Chop the grilled pineapple and place in a small saucepan with 1 cup water, 2 tbsp agave nectar and 1 tbsp sugar (optional for body). Bring to a gentle simmer over medium heat and mash the pineapple with a spoon. Simmer 6–8 minutes to extract flavor. Remove from heat and let cool 10 minutes.

Strain and store

Strain the mixture through a fine mesh sieve, pressing solids to extract juice. Discard solids. Cool syrup to room temperature then refrigerate until ready. Yield should be about 3–4 oz concentrated syrup (more if desired).

For assembling the cocktails

Prep glasses

Rub a lime wedge around the rim of 4 rocks/coupe glasses. Dip rims into coarse salt or Tajín to coat. Fill each glass with a few ice cubes to chill while you mix.

Mix cocktail (single batch makes 4 cocktails)

In a shaker add 6 oz jalapeño-infused tequila, 3 oz triple sec, 4 oz fresh lime juice, 3 oz grilled pineapple syrup and 1 tbsp agave nectar (adjust to taste). Fill the shaker with ice, secure the lid and shake vigorously for 12–15 seconds until well chilled.

Strain and serve

Discard ice from chilled glasses. Strain the cocktail evenly into the 4 prepared glasses over fresh ice. Garnish each with a small grilled pineapple wedge and a jalapeño slice. If you prefer extra heat, float a thin jalapeño round on top or add a dash of pineapple syrup.

Adjustments & storage

Taste one cocktail and adjust sweetness or heat as needed: add more agave (½ tsp increments) for sweetness, or a small splash of uninfused tequila to lessen heat. Store leftover jalapeño-infused tequila refrigerated for up to 2 weeks, and pineapple syrup refrigerated for up to 1 week.
