Crostata Dough Preparation

    Make the Dough

    In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

    Form the Dough

    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Apple Filling Preparation

    Prepare the Apples

    Peel, core, and slice the Granny Smith apples into thin wedges.

    Mix Filling Ingredients

    In a large bowl, combine the sliced apples, brown sugar, ground cinnamon, lemon juice, vanilla extract, and cornstarch. Toss until the apples are evenly coated.

Assembling the Crostata

    Roll out the Dough

    Preheat your oven to 375°F (190°C). On a floured surface, roll out the chilled dough into a 12-inch circle.

    Transfer the rolled-out dough to a parchment-lined baking sheet. Place the apple filling in the center of the dough, leaving a 2-inch border around the edges.

    Fold the edges of the dough over the filling, pleating it as you go. Brush the folded edges with the beaten egg and sprinkle with sugar.
