Season the Tombo

Lightly season both sides of the Pacific Tombo filets with salt and black pepper.

Heat the Oil

In a skillet, heat the olive oil over medium-high heat until shimmering.

Sear the Tombo

Add the seasoned Tombo filets to the hot skillet. Sear for 1-2 minutes on each side until a golden crust forms, and the center is still rare. Remove from the skillet and set aside to rest.

Sambal Butter Sauce

Melt the Butter

In the same skillet used for the Tombo, reduce the heat to medium. Add the unsalted butter and let it melt, scraping up any browned bits from the pan.

Add the Sambal

Once the butter is melted and bubbling, stir in the sambal oelek and continue to cook for 1-2 minutes to combine the flavors.

Finish the Sauce

Add lemon juice, minced garlic, and chopped cilantro to the sauce. Stir well and season with salt to taste. Cook for an additional 1-2 minutes.
