Chicken Marinade

Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, paprika, garlic powder, salt, and black pepper. Add the chicken thighs and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Breading
In a separate bowl, mix the all-purpose flour, cornstarch, cayenne pepper, and baking powder. Remove the marinated chicken from the refrigerator and allow excess marinade to drip off.

Coat the Chicken
Dredge each chicken thigh in the flour mixture, pressing gently to ensure a thorough coating. Set aside on a wire rack.
Cooking the Chicken

Fry the Chicken
In a large skillet or deep fryer, heat vegetable oil over medium-high heat. Fry the chicken thighs in batches for about 5-7 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
While the chicken is frying, wash and cut the russet potatoes into fries. Soak them in cold water for 30 minutes to remove excess starch.

Assemble the Sandwich
Toast the burger buns lightly. On each bun, layer a piece of fried chicken, a couple of leaves of Little Gem lettuce, and slices of tomato. Drizzle spicy honey over the top and place the bun top on.
