For the Seared Rare Tombo

Prepare the Tuna
Pat the tombo tuna steaks dry with a paper towel. Season both sides with salt and black pepper.

For the Sambal Butter Sauce

Melt the Butter
In a small saucepan over low heat, melt the unsalted butter.

Add Sambal and Lime
Once melted, stir in sambal oelek, lime juice, and minced garlic. Cook for an additional 2-3 minutes, stirring frequently until well combined. Remove from heat.
For the Fried Forbidden Rice

Cook the Rice
Rinse the forbidden rice under cold water. Cook according to package instructions until tender. Fluff and set aside.

Prepare the Fried Rice
In a large skillet, heat sesame oil over medium heat. Add the diced Chinese sausage and sauté for about 2-3 minutes until slightly crispy.

Combine and Season
Add the cooked forbidden rice to the skillet. Pour in soy sauce, and season with salt and pepper. Stir well to combine everything and cook for an additional 2-3 minutes until heated through.
