Preparation

    Prepare the Rice

    Rinse the forbidden black rice under cold water until the water runs clear. Cook according to package instructions, typically in a rice cooker or on the stovetop, using a ratio of 1 cup of rice to 2 cups of water. Once cooked, let it sit covered for 10 minutes. Fluff with a fork before serving.

    Prepare the Edamame

    Boil edamame pods in salted water for about 5 minutes until tender. Drain and set aside.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood bacon until crispy. Remove from skillet and place on paper towels to drain excess fat. Reserve some bacon fat in the skillet for later use.

    Toast the Pine Nuts

    In a small dry skillet over medium heat, toast the pine nuts for about 3-4 minutes, stirring frequently, until they are golden and fragrant. Set aside.

    Slice Green Onions

    Chop the green onion into thin slices, separating the white parts from the green tops.

Cooking

    Sear the Fish

    In the same skillet used for bacon, add olive oil and heat over high heat. Season the Pacific Tombo fillets with salt and pepper. Sear each side for about 1-2 minutes for rare, ensuring to get a nice crust. Remove from skillet and let rest.

    Cook the Lobster

    In the same skillet, add the lobster tails, cut side down. Sear for 3-4 minutes until the meat is opaque. Flip and cook for an additional 1-2 minutes. Remove from skillet.

Plating

    Plate the Dish

    On a plate, create a bed of forbidden black rice. Top with seared Pacific Tombo and lobster tail. Scatter edamame, crispy bacon pieces, and toasted pine nuts around the dish. Garnish with green onion tops.

    Drizzle soy sauce over the dish if desired. Serve immediately and enjoy!
