Preparation

    Prepare the Seafood

    Season the mahi-mahi fillets, scallops, and prawns with olive oil, salt, pepper, garlic powder, and paprika. Set aside to marinate for 15 minutes.

    Prepare the Vegetables

    Wash the fingerling potatoes thoroughly. Slice the onion and red bell pepper, and trim the broccolini.

Cooking

    Cook the Fingerling Potatoes

    In a pot, bring salted water to a boil. Add the fingerling potatoes and cook for about 15-20 minutes until fork-tender. Drain and set aside.

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and red bell pepper. Sauté for about 5 minutes until softened. Add the broccolini and sauté for another 3-4 minutes until bright green and tender-crisp.

    Cook the Seafood

    In another skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the mahi-mahi fillets and cook for 3-4 minutes on each side until golden brown and cooked through. Remove and keep warm.

    Cook the Scallops and Prawns

    In the same skillet, add the scallops and prawns. Cook for 2-3 minutes on each side until scallops are golden and prawns are pink and opaque.

Serving

    Plate the Dish

    On a plate, arrange the sautéed vegetables, place the fingerling potatoes on the side, and top with the cooked mahi-mahi, scallops, and prawns. Drizzle with lemon juice and sprinkle with lemon zest before serving.
