Lobster Preparation

    Boil the Lobster

    In a large pot, bring 4 cups of water and 1 tsp of salt to a boil. Add the 8 oz lobster tail and cook for about 8-10 minutes or until the meat is opaque and cooked through. Remove from the pot and let it cool slightly before cracking the shell.

Loaded Mashed Potatoes

    Prepare the Potatoes

    Peel and chop 2 lbs of Yukon Gold potatoes into even-sized pieces. Place them in a pot of salted water and boil until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add 4 tbs of butter, 4 oz of cream cheese, 1 cup of sour cream, 1 cup of shredded cheddar cheese, and 1 tsp of salt and 1 tsp of black pepper. Mash until smooth and creamy.

    Add Green Onions

    Chop the bunch of green onions and fold them into the mashed potatoes for added flavor and texture.

Grilled Asparagus

    Prepare the Asparagus

    Trim the tough ends off 1 lb of asparagus and place them in a bowl. Drizzle with 2 tbs of olive oil and season with salt and black pepper to taste.

    Grill the Asparagus

    Preheat a grill or grill pan over medium-high heat. Grill the asparagus for about 5-7 minutes, turning occasionally, until tender and slightly charred.

Lemon Butter Sauce

    Make the Lemon Butter Sauce

    In a small saucepan over low heat, melt 4 tbs of butter. Add 2 tbs of lemon juice, 2 minced garlic cloves, and 2 tbs of chopped parsley. Stir until combined and heated through.
