Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

Mix the filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and mix until creamy.

Add remaining ingredients
Add sour cream, lemon juice, lemon zest, and vanilla extract. Mix until combined. Add eggs one at a time, beating well after each addition.

Bake the cheesecake
Pour the filling over the cooled crust. Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.

Chill the cheesecake
Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

Simmer the mixture
Bring to a gentle simmer and cook for about 10 minutes until the cherries are softened and the syrup thickens slightly. Let cool.

In a saucepan over low heat, combine heavy cream and chopped chocolate. Stir until the chocolate is melted and smooth.

Remove from heat and stir in the butter until fully incorporated. Let cool slightly before serving.
