Method

Crust Preparation

  1. 1

    Prepare the crust

Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and sugar. Melt the butter and mix it into the crumb mixture until fully combined.

  2. 2

    Form the crust

Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

Cheesecake Filling

  1. 3

    Mix the filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and mix until creamy.

  2. 4

    Add remaining ingredients

Add sour cream, lemon juice, lemon zest, and vanilla extract. Mix until combined. Add eggs one at a time, beating well after each addition.

  3. 5

    Bake the cheesecake

Pour the filling over the cooled crust. Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.

  4. 6

    Chill the cheesecake

Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

Brandied Cherries

  1. 7

    Prepare the cherries

In a saucepan over medium heat, combine pitted cherries, sugar, brandied cherry liqueur, and lemon juice. Stir until the sugar dissolves.

  2. 8

    Simmer the mixture

Bring to a gentle simmer and cook for about 10 minutes until the cherries are softened and the syrup thickens slightly. Let cool.

Chocolate Sauce

  1. 9

    Make the chocolate sauce

In a saucepan over low heat, combine heavy cream and chopped chocolate. Stir until the chocolate is melted and smooth.

  2. 10

    Finish the sauce

Remove from heat and stir in the butter until fully incorporated. Let cool slightly before serving.
