Grilled Prawn Sesame Noodle Salad Recipe

Cooking Noodles

    Prepare the Noodles

    In a large pot, bring salted water to a boil. Add the rice noodles and cook according to package instructions until tender, usually about 4-6 minutes. Drain and rinse under cold water to stop cooking. Set aside.

Grilling Prawns

    Marinate and Grill the Prawns

    In a mixing bowl, combine the minced garlic, olive oil, salt, and black pepper. Add the prawns and toss to coat. Let marinate for about 15 minutes. Preheat a grill or grill pan over medium-high heat. Grill the prawns for 2-3 minutes on each side until they are opaque and cooked through. Remove from heat and set aside.

    Combine the Salad Ingredients

    In a large mixing bowl, combine the shredded Chinese cabbage, red cabbage, chopped cilantro, and fried shallots. Add the cooked rice noodles and grilled prawns to the bowl.

Making Dressing

    Whisk the Dressing

    In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, and honey (or sugar) until well combined. Stir in the toasted sesame seeds.

Assembling the Salad

    Dress the Salad

    Pour the prepared dressing over the salad mixture and toss gently to combine. Adjust seasoning with salt and pepper if needed.

    Divide the salad among serving plates and sprinkle the chopped toasted cashews on top. Serve immediately.
