Method

Steak Preparation

    Prepare the Steak

    Season both sides of the New York Strip Steak with salt and black pepper. Drizzle olive oil over the steaks and let them marinate for at least 30 minutes at room temperature.

    Grill the Steak

    Preheat the grill to medium-high heat. Place the marinated steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let rest for 5 minutes before slicing.

Garlic & Chili Broccolini Preparation

    Blanch the Broccolini

    Bring a pot of salted water to a boil. Add broccolini and cook for 2-3 minutes until bright green and tender. Drain and immediately plunge into ice water to stop cooking. Drain again and set aside.

    Sauté the Broccolini

    In a skillet, heat olive oil over medium heat. Add minced garlic and red chili flakes, and sauté for 1 minute until fragrant. Add the blanched broccolini and sauté for an additional 2-3 minutes. Drizzle with lemon juice and season with salt to taste before serving.

Loaded Pomme Purée Preparation

    Prepare the Potatoes

    Peel and cut the russet potatoes into equal-sized chunks. Place them in a pot of cold salted water and bring to a boil. Cook for approximately 15-20 minutes until tender.

    Make the Purée

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy. Stir in chopped chives and sour cream, mixing well before serving.

Red Wine Demi Preparation

    Prepare the Demi

    In a saucepan, melt butter over medium heat. Add finely chopped shallots and sauté until translucent, about 3-4 minutes.

    Reduce the Sauce

    Pour in red wine and bring to a boil. Reduce heat and let simmer until the wine reduces by half, about 10 minutes. Add beef stock and continue to simmer until the sauce thickens, about another 10 minutes. Season with salt and black pepper to taste before serving.
