Red Wine Demi

Method

Steak Preparation

  1. 1

    Prepare the Steak

Remove the flat iron steak from the refrigerator and let it come to room temperature for about 30 minutes. This ensures even cooking.

  2. 2

    Season the Steak

Rub the steak with olive oil, then season generously with salt, black pepper, and garlic powder on both sides.

  3. 3

    Grill the Steak

Preheat the grill to medium-high heat. Grill the steak for about 4-5 minutes on each side for medium-rare, adjusting time for desired doneness. Remove from grill and let rest for 5-10 minutes before slicing.

Garlic & Chili Broccolini Preparation

  1. 4

    Prepare the Broccolini

Wash the broccolini under cold water and trim the ends to remove any tough parts.

  2. 5

    Sauté the Broccolini

In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the broccolini and red chili flakes. Sauté for about 5-7 minutes until tender, adding salt to taste.

Loaded Mashed Potatoes Preparation

  1. 6

    Cook the Potatoes

Peel and cut the russet potatoes into chunks. Boil in a large pot of salted water for about 15-20 minutes, or until fork-tender. Drain and return to the pot.

  2. 7

    Mash the Potatoes

Add butter, heavy cream, and salt to the potatoes. Mash until smooth and creamy.

  3. 8

    Add Toppings

Stir in shredded cheddar cheese and chopped green onions until well combined. Adjust seasoning if necessary.

Red Wine Demi Preparation

  1. 9

    Prepare the Demi

In a saucepan, add minced shallot and sauté in butter over medium heat until translucent, about 2-3 minutes.

  2. 10

    Add Wine and Stock

Pour in red wine and beef stock. Bring to a boil, then reduce to a simmer. Cook until the mixture reduces by half, about 10-15 minutes.

  3. 11

    Finish the Sauce

Season with salt and pepper to taste. Strain if desired for a smoother sauce, then keep warm until serving.
