Preparation of Tofu

Press and Cube Tofu
Press the firm tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top for about 15 minutes. Once pressed, cut the tofu into bite-sized cubes.

Mix Marinade
In a bowl, combine gochujang, soy sauce, maple syrup, rice vinegar, minced garlic, and minced ginger. Whisk until smooth.

Marinate Tofu
Place the cubed tofu into the marinade, ensuring all pieces are well-coated. Let it marinate for at least 30 minutes, or up to 2 hours for more flavor.
Frying

Coat Tofu
After marinating, remove the tofu from the marinade and toss it in cornstarch until evenly coated.

Heat Oil
In a large frying pan, heat vegetable oil over medium-high heat until shimmering.

Fry Tofu
Carefully add the coated tofu cubes to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes on each side. Remove and drain on paper towels.

Once all tofu is fried, place it in a serving dish. Sprinkle chopped scallions and sesame seeds over the top for garnish.
