Method
Filet Mignon

Prepare the Steaks
Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps in even cooking.

Season the Steaks
Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Steaks
In a large skillet, heat olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

Rest the Steaks
Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing.

Prepare the Broccolini
Rinse the broccolini under cold water and trim the ends.

Add the Broccolini
Add the broccolini to the skillet, sprinkle with red chili flakes, and season with salt. Sauté for about 4-5 minutes until tender but still bright green.

Red Wine Demi

Sauté Shallots
In the same skillet used for the steaks, add the minced shallots and sauté for 2-3 minutes until softened.

Add Beef Stock
Add the beef stock to the skillet and continue to simmer until the sauce thickens, about 10 minutes.

Finish the Sauce
Remove from heat and stir in butter. Season with salt to taste.
