Method

Flourless Chocolate Cake

    Melt Chocolate and Butter

    In a heatproof bowl, combine dark chocolate and unsalted butter. Melt over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

    Combine Ingredients

    In another bowl, whisk together granulated sugar, eggs, vanilla extract, and salt until well combined. Slowly whisk in the melted chocolate mixture until smooth.

    Bake

    Preheat the oven to 180°C (350°F). Pour the batter into a greased 9-inch round cake pan. Bake for 25-30 minutes until the center is set. Allow to cool completely before removing from the pan.

Mixed Berry Sauce

    Prepare Sauce

    In a saucepan, combine mixed berries, granulated sugar, and lemon juice. Cook over medium heat until the berries break down and the mixture thickens, about 10 minutes. Let cool before serving.

Chantilly Cream

    Whip Cream

    In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Whip with an electric mixer until soft peaks form. Refrigerate until serving.

Lemon Cheesecake

    Prepare the Cheesecake Mixture

    In a large bowl, beat cream cheese and granulated sugar together until smooth. Add eggs, lemon zest, lemon juice, and vanilla extract. Mix until fully combined.

    Pour the cheesecake mixture into a greased springform pan. Bake at 160°C (320°F) for about 40-45 minutes until set but slightly jiggly in the center. Let cool completely before refrigerating for at least 4 hours.

Brandied Cherries

    In a small saucepan, combine dark chocolate and heavy cream. Heat gently until melted and smooth, stirring frequently. Let cool before serving.
