Steak Preparation

Season the Steak
In a small bowl, mix together the smoked paprika, cumin, garlic powder, oregano, salt, and black pepper. Rub the mixture all over the ribeye steaks.

Sear the Steak
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the seasoned steaks. Cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.

Rest the Steak
Remove the steaks from the skillet and let them rest for 5 minutes before slicing.
Chimichurri Preparation

Combine Ingredients
In a medium bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well until all ingredients are combined.

Let it Sit
Allow the chimichurri to sit for at least 15 minutes at room temperature to allow the flavors to meld together.
Serving

Serve the Dish
Slice the rested steak against the grain and serve it topped with a generous drizzle of the green chimichurri sauce.
