Turkey Patty
Prepare aromatics
Finely mince the shallot and garlic. Chop the parsley. In a small bowl combine minced shallot, garlic, and chopped parsley so they are ready to add to the meat.
Combine ingredients
In a large bowl place 1 lb lean ground turkey. Add the shallot-garlic-parsley mixture, 1 tsp Worcestershire sauce, 1 tsp Dijon mustard, 1 tsp black pepper, 3 tsp fine sea salt, 1 lightly beaten egg, and 1 tbs panko breadcrumbs. Gently fold ingredients together with your hands or a spatula until just combined — do not overwork or the patties will become dense.
Portion and shape
Divide the mixture into 4 equal portions (about 4 oz each). Wet your hands slightly to prevent sticking and form each portion into a patty roughly 3/4 inch thick, making a slight indentation in the center of each patty to reduce bulging while cooking.
Chill (optional)
For best shape retention, place patties on a plate, cover, and chill in the refrigerator for 15–20 minutes. This helps them hold together on the grill or in the pan.
Cook patties
Heat a large skillet or grill over medium-high heat and add 1 tbsp olive oil, spreading to coat. When the oil is shimmering, place patties in the skillet (do not overcrowd). Cook 4–5 minutes on the first side until golden and a crust forms. Flip and cook 4–5 minutes more. If using cheese, place a slice on each patty during the last minute and cover briefly to melt. Internal temperature should reach 165°F (74°C). Remove patties and rest for 3–5 minutes before assembling.
Toppings & Assembly
Prepare buns and condiments
Split the 4 buns and toast cut sides in a dry skillet or under a broiler until lightly golden (about 1–2 minutes). In a small bowl mix 1/4 cup mayonnaise, 2 tbs ketchup, and 1 tsp yellow mustard to make a quick burger sauce. Thinly slice the tomato and red onion. Set out lettuce leaves.
Assemble burgers
Spread about 1 1/2 tbs of the burger sauce on both the top and bottom bun halves. Place lettuce on the bottom bun, then the rested turkey patty (with melted cheese if using), a slice of tomato, and a few rings of red onion. Cap with the top bun.
