Prep the chicken

Pat the chicken leg quarters dry with paper towels. Trim any excess loose skin or large flaps of fat. If thicker at one end, you may make a shallow cut through the skin (not deep into meat) to help render fat and allow rub to penetrate.

Make the dry rub

In a small bowl combine kosher salt, black pepper, paprika, garlic powder, onion powder and brown sugar. Mix thoroughly so sugar and spices are evenly distributed.

Apply oil and binder

In a separate small bowl whisk together olive oil, apple cider vinegar, and mustard. Lightly brush or rub this mixture over each chicken quarter; this helps the dry rub adhere and promotes browning.

Season the chicken

Generously sprinkle the dry rub over all sides of the chicken quarters, rubbing it into the skin and into small crevices. Let the seasoned chicken rest on a tray uncovered in the refrigerator for 30–60 minutes for a light dry brine (optional) or proceed directly to smoking.

Prepare the smoker

Preheat your smoker to a steady 250°F (120–125°C). If using a charcoal or pellet smoker, position a water pan under the grill grates and add about 1 cup of water to help stabilize temperature and add humidity. Add 2 cups of soaked wood chips or dry chunks to the heat source according to your smoker's instructions (if using chips, soak 20–30 minutes beforehand).

Smoke the chicken

Place the chicken quarters skin-side up on the smoker grate, leaving space between pieces for even smoke circulation. Insert a probe thermometer into the thickest part of the thigh without touching bone. Smoke at 250°F until internal temperature reaches 165°F (74°C) in the thickest part of the thigh, typically 1.5–2.25 hours depending on size. Expect approximately 90–135 minutes; start checking at 75 minutes.

Optional glaze

If using barbecue sauce, during the last 10–15 minutes of smoking brush a thin layer of sauce onto the skin, then return chicken to smoker to set the glaze and caramelize slightly. Apply a second light coat 5 minutes before removing for a glossy finish.

Rest and finish

Remove chicken from the smoker when the thermometer reads 165°F. Tent loosely with foil and let rest 10 minutes; during this time carryover cooking will raise the temperature a few degrees and juices will redistribute.

Serve

Optionally sprinkle with chopped parsley. Serve whole or portion each quarter into leg and thigh as desired. Pair with sides such as coleslaw, smoked mac and cheese, or grilled vegetables.

Safety note

Ensure final internal temperature in the thickest part of the thigh reaches at least 165°F (74°C). If desired texture and color require higher temperature, you may continue to 175–180°F for more tender, falling-off-the-bone meat.
