Method
Preparation Directions
- 1
Prepare the Sriracha Aioli
In a bowl, mix mayonnaise and Sriracha sauce until well combined. Adjust seasoning with salt and pepper to taste. Set aside.
- 2
Prepare the Fish or Shrimp
If using fish, season the fillets with salt and pepper. For shrimp, ensure they are peeled and deveined. You can grill or fry them.
- 3
Cooking
If frying, heat cooking oil in a pan over medium heat. Fry the fish fillets for about 4-5 minutes on each side or until golden brown. For shrimp, cook for about 2-3 minutes on each side until they turn pink. If grilling, cook on a preheated grill for about 3-4 minutes on each side for shrimp or until fish is cooked through.

Assemble the Po Boy
Slice the French bread rolls in half. Spread a layer of Sriracha aioli on both sides. Add a layer of lettuce, followed by slices of tomato and onion. Place the cooked fish or shrimp on top and drizzle with more Sriracha aioli if desired. Close the sandwich.
- 5
Serve
Cut the Po Boy in half and serve immediately with additional aioli on the side.
