    Grill the Chicken

    Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes on each side or until fully cooked. Let them rest, then slice.

    Prepare the Creamed Spinach

    In a skillet, sauté minced garlic in a bit of olive oil until fragrant. Add spinach and cook until wilted. Stir in the parmesan cheese until melted and creamy.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny.

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place over a pot of simmering water (double boiler). Slowly drizzle in melted butter while whisking until the sauce thickens. Season with salt and cayenne pepper.

    Toast the English muffins. Place a slice of grilled chicken on each muffin half, top with creamed spinach, a poached egg, and drizzle with hollandaise sauce.
