Method

Preparation

  1. 1

    Make the Fruit Compote

In a saucepan over medium heat, combine mixed fruit, sugar, and lemon juice. Cook until the fruit is soft and the mixture has thickened slightly, about 10-15 minutes. Set aside.

  2. 2

    Prepare the Foster Sauce

In a skillet, melt butter over medium heat. Add brown sugar and stir until dissolved. Add sliced bananas and cook for 2-3 minutes until caramelized. If desired, add rum and flambé (carefully ignite) for added flavor. Set aside.

  3. 3

    Prepare the Egg Mixture

In a bowl, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.

  4. 4

    Stuff the Bread

Spread a layer of cream cheese on one side of each of 4 slices of bread. Top with fresh berries and cover with the remaining 4 slices of bread to form sliders.

Cooking

  1. 5

    Cook the Sliders

Dip each slider in the egg mixture, coating both sides. In a skillet over medium heat, cook the sliders until golden brown on both sides, about 3-4 minutes per side.

Serving

  1. 6

    Assemble and Serve

Cut the sliders in half, plate them, and top with fruit compote, foster sauce, whipped cream, and a sprinkle of powdered sugar. Enjoy!
